I tried squirrel once just out of interest. I pan fried it in garlic and coriander. It was fiddly to skin for a small bit of meat, but tasted fine. There is a hotel near to us in the New Forest that puts squirrel on the menu as "flightless Partridge" ! Tell it like it is I say.

I think it depends on where the squirrel does most of it's foraging. I would expect a completely rural squirrel to have a nutty taste, as that is it's main diet. On the other hand a Squirrel living in the town or city could be eating anything and I would stay away.
